However, the real challenge for the future of the sector does not lie in milk alone, but in the ability to innovate and make the entire production cycle sustainable and profitable.

This meeting aims to shine a spotlight on a resource with enormous and still largely unexplored potential: buffalo meat. Through an analysis of its outstanding nutritional properties and gastronomic value, the talk will explore how enhancing this product can transform a long-standing challenge, such as the management of male buffalo, into the cornerstone of a new circular, ethical and high-value-added business model for the entire supply chain.

Campania’s fisheries production represents a heritage of biodiversity, traditions and expertise that plays a strategic role in the sustainable development of coastal areas.

Protecting marine ecosystems, scientifically monitoring resources and implementing Fisheries Management Plans are now essential tools for ensuring the conservation of fish stocks, the competitiveness of businesses and the quality of production.

The talk aims to explore the role of scientific research, institutions, Producer Organisations and local centres of excellence in building a development model that combines environmental sustainability, innovation and the economic enhancement of fisheries and aquaculture supply chains.

The tenth edition of Bufala Fest invites us to reflect on the “vision that unites”, a fundamental paradigm for safeguarding the future of our agri-food excellence.

In this context, the digital transition does not represent a break with artisanal tradition, but rather its most powerful ally. This talk explores a new and strategic horizon: the use of new technologies as an infrastructural bridge connecting two worlds historically perceived as separate, namely the buffalo livestock supply chain and the fisheries supply chain.

Through the application of Blockchain traceability systems, IoT (Internet of Things) sensors and Artificial Intelligence, the talk will demonstrate how barriers between “land and sea” can be overcome.

The talk will analyse the major opportunities arising from the creation of a shared digital hub: from unquestionable certification of origin and production ethics, to logistical optimisation of the cold chain, through to the development of smart contracts capable of guaranteeing complete transparency from pasture and fishing net all the way to the table.

Digitally connecting the buffalo and fisheries sectors means transforming the geographical proximity of our territory into a genuine “smart ecosystem”, capable of protecting Made in Italy from fraud, increasing consumer confidence and positioning our supply chains on global markets with an unprecedented competitive advantage. However, in an increasingly mature food and wine tourism market, focusing exclusively on dairy excellence means expressing only part of the area's potential. This talk explores how to harness the extraordinary appeal of the buffalo supply chain in its entirety, including through the enhancement of meat, cured meats and the virtuous circular-economy practices associated with them.

It is precisely within this integrated vision that the supply-chain approach meets major global hospitality trends. During the talk, we will connect the expectations of contemporary travellers, increasingly guided by rigorous ESG parameters (environmental protection, social impact and ethical governance), with the deep-rooted values that make Italian Cuisine part of UNESCO Intangible Cultural Heritage.
